1 Würfel Hefe, frisch
1 Teelöffel Zucker
500 Milliliter Wasser, lauwarm
500 Gramm weißes Mehl, Mischung, glutenfrei
60 Gramm Leinsamen, geschrotet
100 Gramm Buchweizen, Mehl
1 Teelöffel Tafelsalz
3 Esslöffel Speiseöl
120 Gramm Walnüsse

Außerdem:
etwas Margarine (vegan)

Lösen Sie die Hefe mit dem Zucker in 100 Milliliter lauwarmen Wasser in einer Schüssel auf. Dann sieben Sie das Mehl, das Buchweizenmehl und Tafelsalz in eine Schüssel und geben die Leinsamen hinzu. Danach gießen Sie das Hefewasser und die restlichen 400 Milliliter Wasser mit dem Speiseöl zusammen in die Schüssel und lassen die Zutaten gut miteinander in der Küchenmaschine verkneten.

Anschließend hacken Sie die Walnüsse etwas klein und kneten sie unter den Teig. Dann füllen Sie den Teig mit einem nassen Esslöffel in eine mit Margarine eingefettete Kastenform und streichen ihn glatt.

Danach lassen Sie den Teig mit einem sauberen Geschirrtuch abgedeckt etwa 30 Minuten an einem warmen Ort gehen bis sich das Volumen verdoppelt hat.

Nun backen Sie den Teig bei vorgeheizten 220 Grad Celsius (Umluft) etwa 10 Minuten, dann schalten Sie den Backofen auf 200 Grad Celsius herunter und backen das Brot noch 40 Minuten weiter. Zum Schluss pinseln Sie das Brot mit etwas Speiseöl ein und backen es noch 10 Minuten fertig bevor Sie es eventuell auskühlen lassen und Ihren Gästen servieren.
