150 Gramm Haferflocken, glutenfreie
50 Gramm Kastanienmehl
50 Gramm weißes Mehl, glutenfrei
1 Teelöffel Backpulver, glutenfrei
1 Teelöffel, gehäuft Flohsamen-Schalen, gemahlen (Fiber husk)
200 Gramm Zucker, braun (Basterdzucker, siehe Tipp)
150 Gramm Pflanzenmargarine
etwas kaltes Wasser, eventuell

Außerdem:
etwas Backpapier

Geben Sie die trockenen Zutaten in ein Sieb und sieben Sie sie in eine Schüssel. Dann kneten Sie die weiche Margarine unter, falls der Teig zu bröckelig ist, können Sie noch etwas kaltes Wasser unterkneten.

Danach setzen Sie kleine Häufchen mit reichlich Abstand auf ein mit Backpapier ausgelegtes Backblech. Die Kekse laufen übrigens beim Backen noch auseinander, eventuell sollten Sie den Teig in 2 Portionen backen. Danach drücken Sie die Häufchen mit der Hand oder einer Gabel platt und backen die Plätzchen bei 200 Grad Celsius (Oberhitze/Unterhitze) etwa 10-13 Minuten im Backofen.

Nach dem Backen lassen Sie die Plätzchen etwa 2 Minuten auf dem Blech abkühlen sonst brechen sie zu schnell. Dann legen Sie die Plätzchen mithilfe eines flachen Pfannenwenders zum weiteren Abkühlen auf ein Gitter und backen eventuell auf dem gleichen Blech und Backpapier die zweite Ladung.

Unsere Tipps:
Hafer ist übrigens an sich glutenfrei, leider garantieren die üblichen Hersteller keine glutenfreie Produktion. Im Internet oder Fachhandel sind glutenfrei gekennzeichnete Haferflocken zu kaufen.

Die gemahlenen Flohsamenschalen sorgen außerdem für die fehlende Klebekraft. Nicht zu verwechseln sind sie mit ganzen Flohsamen, die genau wie Leinsamen für die Darmaktivität gut sind.

Unser Tipp:
Der Basterdzucker wird natürlich durch Mischen von sorgfältig gesiebtem Kristallzucker mit einem spezifischen Invertzuckersirup hergestellt.
