400 Gramm Blumenkohl
200 Gramm Rauchertofu

Für die Sauce:
100 Milliliter Wasser
50 Milliliter Ahornsirup
50 Milliliter Sojasauce
3 Esslöffel Reisweinessig
2 Esslöffel Sriracha-Sauce
1 Esslöffel Stärkemehl
1 Teelöffel Ingwerpulver
½ Bund Frühlingszwiebel
2 Knoblauchzehen
2 Esslöffel Speiseöl

Außerdem:
etwas Küchenpapier

Halbieren Sie den Tofu und pressen Sie ihn zwischen Küchenpapier aus. Danach schneiden Sie den Tofu in Würfel, geben die Würfel in eine Schale und geben 1 Esslöffel Speisestärke darüber. Nun schütteln Sie die Zutaten gut durch, bis alle Würfel rundherum mit Stärke bedeckt sind.

Den grünen Teil der halbierten und kalt abgespülten Frühlingszwiebeln schneiden Sie danach bitte in Ringe und stellen sie beiseite. Den weißen Teil verrühren Sie bitte mit den restlichen Zutaten für die Sauce im Mixer zu einer glatten Sauce.

Dann teilen Sie den Blumenkohl in Röschen, spülen sie kurz kalt ab und garen sie in einem Topf mit Salzwasser bissfest. Anschließend zerteilen Sie die Röschen im Mixer oder einer Küchenmaschine, bis sie Reisgröße haben. Jetzt geben Sie den Blumenkohl zurück in den Topf und setze einen Deckel auf, damit er warm bleibt.

Die Tofuwürfel braten Sie danach in einer mittelgroßen Pfanne mit heißem Speiseöl rundherum knusprig an. Dann stellen Sie die Pfanne beiseite und lassen die Sauce in der Pfanne kurz aufkochen, bis sie andickt. Nun geben Sie die Tofuwürfel wieder hinzu und schwenken sie ganz kurz durch, bis sie rundherum glasiert sind.

Danach richten Sie den Blumenkohl-Reis auf vorgewärmten Tellern an und bestreuen das Gericht vor dem Servieren mit den grünen Frühlingszwiebelröllchen.
