Französische Fischsuppe

Menge: 4 Portionen

400 g Fischfilet (Seelachs,
-Lengfisch)
Essig
Salz
50 g Butter
1 bn Suppengrün
1 tb Mehl, gehäuft
1 l Fischfond oder Gemüsebrühe
100 ml Sahne
3 tb Zitronensaft (evtl. mehr)
Salz
Pfeffer
Tabasco nach Geschmack
1 bn Petersilie

Fischfilet säubern, säuern, salzen und in kleine Würfel schneiden.
Fett erhitzen, das geputzte, gewürfelte Suppengemüse darin andünsten.
Mehl zugeben, kurz anschwitzen, mit heißer Brühe ablöschen und
köcheln lassen. Nach 10 Minuten den Fisch hineingehen und 10
Minuten auf kleiner Gasflamme ziehenlassen. Sahne und Zitronensaft
hinzufügen, mit Salz, Pfeffer und Tabasco abschmecken. Mit
gehackter Petersilie bestreut servieren.
Zubereitungszeit: ca. 45 Minuten
