1 lg Salatgurke
200 g Vollmilchjoghurt
1/2 Knoblauchzehe
Etwas Zitronensaft
5 tb Sahne
Etwas Eiswasser
; Salz
1 pn Zucker
1 pn Cayennepfeffer
1 1/2 tb Walnuesse; gehackt
4 Frische Minzeblaetter

Die Gurken schaelen, halbieren, entkernen und kleinschneiden. Mit
Joghurt, Knoblauch und etwas Zitronensaft im Mixer fein puerieren.
Sahne hinzufuegen und mit etwas Eiswasser zu einer homogenen Suppe
verruehren. Mit Salz, Zucker und Cayennepfeffer wuerzig abschmecken.
Mindestens 1 Stunde kalt stellen.

Die Walnuesse in einer Pfanne trocken roesten und am besten noch
heiss in die kalte Suppe geben.

Suppe falls noetig nachwuerzen, in zwei Tassen fuellen und mit den
fein geschnittenen Minzeblaettern bestreuen.

Dazu passt ein goldbraun geroesteter Vollkorntoast.

Pro Person ca. 270 Kalorien.

INFO ZUM REZEPT
: Die Gurkensuppe sollte vor dem Servieren noch einmal gut
aufgeruehrt werden, da sie sich meist etwas absetzt. Die Gurken-
Kaltschale ist an heissen Sommertagen eine koestliche, kalorienarme
Erfrischung. Die Einlage kann je nach Lust und Laune geaendert
werden. So passen auch kleine Gurkenwuerfel und Dillspitzen in die
Suppe oder Croutinos, die man rasch aus der Packung ueber die Suppe
streut. Je nach persoenlichem Geschmack passen entweder Croutinos
mit Speck und Apfel, Walnuss und Sojakeimen oder auch mit Paprika
und Pinienkernen.
