1000 g Paprikaschote rot gelb grün
500 g Zucchini
500 g Auberginen
Salz
125 ml Öl
1 bn Frühlingszwiebeln
2 Knoblauchzehen
125 ml Zitronensaft
200 ml Olivenöl
1 Zweig Rosmarin
1 bn Thymian
Pfeffer aus der Mühle
30 g Kapern aus dem Glas
1 unbehandelte Zitrone; davon
- die abgeriebene Schale

Die Paprikaschoten vierteln, entkernen und mit der Hautseite nach oben
auf ein Backblech legen. Auf der 2. Schiene von von oben unter dem
vorgeheizten Grill 3-5 Minuten grillen, bis die Haut schwarz wird und
Blasen wirft. Die Paprikaschoten mit einem feuchten Tuch bedecken und
etwas abkühlen lassen. Mit einem Messer häuten und auf eine Platte
legen.

Die Zucchini und die Auberginen putzen, längs in Scheiben schneiden.

Die Gemüsescheiben trockentupfen und portonsweise im heißen Öl auf
jeder Seite 2-3 Minuten goldbraun braten. Auf Küchenpapier abtropfen
lassen und auf einer Platte anrichten.

Die Frühlingszwiebeln putzen, das Weiße würfeln und über die
Paprikaschoten streuen. Danach das Grüne schräg in dünne Scheiebn
schneiden und über das Zucchini-Auberginen-Gemüse streuen.

Den Knoblauch pellen, durchpressen und mit Zitronensaft und Olivenöl
verrühren. Rosmarin und Thymian fein hacken und dazugeben. Die Marinade
kräftig mit Salz und Pfeffer würzen und gleichmäßig über beide
Gemüseplatten verteilen.

Die Kapern und die Zitronenschale über die Paprikaschoten streuen.
Beide Gemüseplaten mit Klarsichtfolie abdecken und bis zum Servieren
kalt stellen.
