2 tb Weisswein (oder hellen Trasubensaft)
1 tb Tomatenpueree
8 Duenne Lauchstangen

1 Thymianzweig
2 tb Zitronensaft

Beachten: die Mengenangaben im Text beziehen sich auf einer
Zubereitung fuer zwei Personen.

Originalton:

Fuer zwei Personen erhitze ich in einer Bratpfanne mit grossem
Durchmesser einen oder zwei Loeffeln Olivenoel, gebe eine
feingehackte Knoblauchzehe dazu, ruehre staendig um - etwa eine halbe
Minute lang. Nicht laenger, denn der Knoblauch soll nicht dunkel und
damit bitter werden. Dann gebe ich einen Essloeffel fluessigen Honig
(entweder fluessig aus dem Glas oder im Wasserbad erwaermt, bis er
nicht mehr dicklich ist) und zwei Essloeffel Sauvignon blanc - einen
Sancerre zum Beispiel - zum Knoblauch, ruehre wiederum um und fuege
dann ganz profanes Tomatenpueree aus der Tube dazu. Ein Essloeffel
genuegt. Jetzt nehme ich das Umruehren noch ernster, weil das
Tomatenmark recht zaeh ist und sich schlecht verteilen laesst. Das
geschieht alles in rasantem Tempo, weil die Pfanne ja heiss ist, der
Knoblauch wiederum droht, braun zu werden (weil die Fluessigkeit
schon beinahe verdampft ist) und das Tomatenpueree die Tendenz hat,
braeunlich zu werden und scheusslich zu stinken. Das Weisse von acht
duennen Lauchstangen, alle sauber gewaschen, abgetrocknet und in zwei
Zentimeter lange Stuecke geschnitten, ruehre ich dazu, etwa drei
Minuten lang bei mittlerer Hitze. Ein ganzer Thymianzweig kommt dazu
une zwei Essloeffel Zitronensaft. Weiterhin umruehren. Deckel drauf,
Hitze aufs Minimum zurueckdrehen. Nach gut fuenf Minuten nehme ich
den Deckel weg. Sobald die Fluessigkeit auf wundersame Weise
verschwunden ist, giesse ich nochmals etwas Weisswein (oder Traubensaft
wenn Kinder mitessen) dazu, wuerze mit etwas Salz und Pfeffer aus der
Muehle. Anrichten und heiss oder lauwarm auf Tellern als Vorspeise servieren.
Ein Glas Sauvignon blanc waere schoen dazu.
