Melone mit Parmaschinken und Vinaigrette

Menge: 4 Portionen

1 reife Ogen-Melone
8 dünne Scheiben Parmaschinken

Vinaigrette

Fruchtfleisch einer
-Passionsfrucht
1 - 1 1/2 El. Weißweinessig
2 tb Sonnenblumenöl
2 ts Walnußöl
1 ds Zucker
1/2 ts milder Senf
1 ds Salz

Melone halbieren, die Kerne mit einem Löffel entfernen. Mit einem
Kugelausstecher so viele Kugeln wie möglich aus dem Melonenfleisch
stechen.

Alle Zutaten für die Vinaigrette in einen Schüttelbecher geben und
10 Sekunden kräftig schütteln, um die Sauce zu mischen; abschmecken.
Melonenkugeln auf 4 Teller verteilen, mit je 2 Scheiben
Parmaschinken garnieren. Zum Schluß auf jeden Teller etwas
Passionsfrucht-Vinaigrette geben.
