Möhrencreme-Suppe mit Ingwer

1 bn Moehren
1 Zwiebel
1 Scheibe Ingwer; walnussgross
1 tb Butter
1/2 l Huehnerbruehe; Instant
400 ml Kokosmilch; ungesuesst
- ersatzweise Milch
; Salz
; Pfeffer a.d.M.
Zitronensaft
1 bn Schnittlauch
4 tb Schlagsahne

Moehren putzen, schaelen, in Stuecke schneiden. Zwiebel und Ingwer schaelen,
wuerfeln.

Butter erhitzen. Zwiebeln und Ingwer darin anduensten. Die Moehren zufuegen,
Bruehe angiessen. Zugedeckt 20 bis 25 Minuten garen lassen, bis sie weich
sind.

Alles puerieren. Kokosmilch angiessen, einmal aufkochen. Mit Salz, Pfeffer und
Zitronensaft abschmecken. Schnittlauch abbrausen, trockenschuetteln,
feinschneiden.

Suppe in Teller fuellen. Sahne einruehren, mit Schnittlauch bestreuen.
