500 g Austernpilze
2 Schalotten
1 tb Butter
1 tb Mehl
1 l Bruehe
1 Eigelb
1/8 l Weisswein
2 tb Creme fraiche
-Salz
-Pfeffer
1 tb Dill; gehackt

Pilze putzen, waschen und kleinschneiden. Schalotten schaelen, fein
wuerfeln und in Butter glasig duensten. Pilze dazugeben und kurz
mitduensten. Mehl daruebergeben und unter Ruehren langsam Bruehe zu
giessen. Bei milder Hitze 20 Min. garen.

Suppe vom Herd nehmen. Eigelb mit Weisswein und Creme fraiche
verquirlt einruehren. Wuerzen, zuletzt Dill dazugeben.
