1 Gemuesezwiebel
2 Knoblauchzehen
50 g Ingwerwurzel; frisch
1 sm Pfefferschote; gruen
2 tb Erdnussoel
1/4 l Gefluegelbruehe
2 tb Sherry; trocken
2 tb Sojasauce

;weisser Pfeffer a.d. Muehle
1 Spur Kreuzkuemmel
100 g Joghurt; fest

Linsen mit Wasser und Kurkuma aufkochen und zugedeckt bei schwacher
Hitze in etwa 20 Minuten weich garen.
Inzwischen Zwiebel und Knoblauch abziehen und fein hacken. Ingwer
schaelen und raspeln. Pfefferschote halbieren, von allen Kernen
befreien, waschen und fein hacken.

Oel in einer grossen Pfanne erhitzen. Zwiebel, Knoblauch, Ingwer und
Pfefferschote darin bei schwacher Hitze unter Ruehren etwa 3 Minuten
schmoren. Linsen, Bruehe , Sherry Essig und Sojasauce zugeben. Mit
Salz, Pfeffer und Kreuzkuemmel wuerzen und bei starker bis mittlerer
Hitze unter haeufigem Umruehren kochen, bis die Fluessigkeit fast
verdampft ist. Von der Kochstelle nehmen, Joghurt untermischen.
Fuellung abkuehlen lassen.

Die Reispapierblaetter vorbereiten: Eine Schuessel mit kaltem Wasser
fuellen ; sie muss so gross sein, dass die Reispapierblaetter flach darin
liegen koennen. Ein Reispapierblatt hineinlegen und mit den
Fingerspitzen mehrmals in das Wasser tauchen, bis es ganz davon
bedeckt ist. Das Blatt gerade eben so weich werden lassen, dass es
sich rollen laesst. Herausnehmen etwas abtropfen lassen und auf der
Arbeitsflaeche ausbreiten. Eine Portion Fuellung auf das Reisblatt
geben. Reisblatt von rechts nach links, oben und unten ueber der
Fuellung zusammenfalten. So dass ein kleines Paeckchen entsteht.
Restliche Blaetter ebenso fuellen, Paeckchen auf ein gefettetes
Backblech legen und mit verquirltem Eigelb bestreichen. Blech in den
kalten Backofen auf die mittlere Schiene schieben.
Ofen auf 200 Grad schalten. Linsenpaeckchen etwa 25 Minuten backen, bis
sie knusprig und leicht gebraeunt sind.
