1 kl. Kopf Radicchio
200 g Feldsalat
50 g Lollo Rosso
3 Kiwis
Salz
Pfeffer
1 Schale Kirschtomaten
4 Perlhuhnbrüstchen
1 tb Majoran
1 Zwiebel
1 tb Zitronenschale, ger.
1 ts Wacholderbeeren
2 tb Butterschmalz, evtl. mehr
1 pn Zucker
1 c Gemüsebrühe
1 tb Senf, mittelscharf, evtl.

einige Tropfen Aceto
-balsamico und Olivenö

Die Blattsalate verlesen, waschen, gut abtropfen lassen, in
mundgerechte Stücke zerpflücken und auf vier dekorativen Tellern
verteilen.

Kiwis schälen, in Scheiben schneiden, Kirschtomaten halbieren und
beides auf den Blattsalaten anrichten.

Perlhuhnbrüstchen unter fließendem Wasser waschen, trockentupfen, mit
Salz, Pfeffer, Majoran, der geriebenen Zitronenschale und den
zerstoßenen Wacholderbeeren einreiben.

Butterschmalz in einer Pfanne erhitzen, die Perlhuhnbrüstchen darin
braten, herausnehmen. Zwiebel schälen, fein hacken und im Bratfett
glasig schwitzen. Mit der Gemüsebrühe ablöschen, einmal auskochen
lassen und den Senf einrühren. Das Ganze mit dem Essig und dem
Olivenöl abrunden und mit Salz, Pfeffer und Zucker würzen.

Die Perlhuhnbrüstchen in Scheiben schneiden, dekorativ zum Salat
anrichten und mit dem warmen Dressing überziehen. Falls vorhanden, mit
frischen Kräutern servieren.

Tip:
Fleisch läßt sich vormittags vorbraten. Man kann es auch leicht
erwärmt auf den Salat geben. Anstatt Perlhuhn kann man
Hähnchenbrustfilets verwenden.
