Scharfe Tomatensuppe

Menge: 4 Portionen

1 Gemüsezwiebel
200 g Sellerieknolle
500 g Fleischtomaten
30 g Butterschmalz
3 tb Tomatenmark
3/4 l Brühe
Salz
1 tb Zucker
1 Messerspitze Cayennepfeffer
200 g Crème fraîche
Pfeffer
1 bn Thymian

Zwiebel, Sellerie und Tomaten in Würfel schneiden. Butterschmalz
erhitzen, Gemüse darin anbraten. Tomatenmark unterrühren, Brühe
angießen, ankochen und 25 Minuten fortkochen.
Suppe pürieren, durch ein Sieb streichen und mit Salz, Zucker und
Cayennepfeffer abschmecken.
Creme fraîche mit Pfeffer cremig rühren. Thymianblätter von den
Stielen zupfen und unter die Crème fraîche rühren. Suppe in
Suppentassen füllen und in die Mitte jeweils einen Klecks Thymiancreme
geben.

Beilage: Dinkelbrot.
