1 Rote Bete (etwa 150 Gramm)
1/3 Sellerieknolle (etwa 100 Gramm)
1/8 Liter Gemüsebrühe
50 Gramm saure Sahne (20 %)
2 Esslöffel Würz-Hefeflocken
1 Apfel (Cox-Orange)
1 Teelöffel gehackter Dill
100 Gramm Pollack (ersatzweise Krabben)

Rote Bete ist reich an Folsäure (blutbildend). Sellerie beruhigt den
Magen, der rohe Apfel steuert Vitamin C bei, die Hefeflocken
B-Vitamine. Pollack ist ein Seefisch (Jod, Fluor), der mit
Krebsfleisch zu Stangen gepresst wird (bei Nordsee). Er schmeckt sehr
zart nach Krabben - ideal, wenn Sie Fisch sonst nicht lieben.

Rote Bete und Sellerie gründlich waschen, großzügig schälen. Dabei
am besten Küchenhandschuhe tragen, denn Rote Bete färbt nachhaltig.
Gemüse in etwa 1 Zentimeter große Würfel schneiden, mit der Gemüsebrühe in
einen Topf füllen.

Zum Kochen bringen und bei kleiner Hitze etwa 35 Minuten garen. Mit
dem Pürierstab fein pürieren. Saure Sahne und Hefeflocken unterziehen.
Geriebenen Apfel und Dill in der Suppe nur warmziehen lassen.

Unser Tipp:
Wer keinen Fisch mag, kann den Pollack weglassen und statt
dessen 1 Eigelb und 50 Gramm milden Schafskäse unter die Suppe ziehen.
Nach diesem Grundrezept lassen sich auch andere Gemüsecremesuppen
zubereiten. Besonders vitaminreich: Rosenkohl, Grünkohl, Porree,
Möhren, Fenchel, Blumenkohl, Brokkoli. Achten Sie darauf, einen
Teil des Gemüses als Rohkost zur Suppe zu geben.
