200 g Hirse
500 ml ;Wasser
1 pn ;Meersalz
750 g Saisongemuese; Fenchel,

-- in mundgerechte Stuecke
Oel
1 Zwiebel; fein gehackt
300 g Tofu
2 tb Sojasauce
Kaese; gerieben

SAUCE


30 g Butter
2 tb Maiskeimoel
4 tb Vollkornmehl
5 dl Fluessigkeit; ca. Menge
-- Wasser, Milch, Bruehe
-- nach Belieben
Meersalz
Muskat
Kraeuter
Knoblauch; gepresst


Die Hirse in heissem Wasser spuelen, abtropfen lassen. Mit dem
Meersalz und Wasser zum Kochen bringen, zugedeckt 10 Minuten koecheln
lassen; anschliessend 15 Minuten quellen lassen.

Inzwischen die Sauce zubereiten: das Fett erwaermen, Mehl beifuegen
und bei kleiner Hitze ein paar Minuten roesten. Vom Feuer nehmen und
kalte Fluessigkeit mit dem Schneebesen langsam einruehren, bis ein
Brei entsteht. Aufkochen, mit Fluessigkeit verduennen und etwa 15
Minuten koecheln lassen. Nach Geschmack wuerzen.

Das Gemuese im Dampfeinsatz knapp 'al dente' garen.

Zwiebel im Oel glasig duensten, den Tofu in der Faust zerdrueckt in
Brocken zugeben und fuenf Minuten ruehrbraten. Vom Feuer nehmen, mit
der Sojasauce wuerzen. Die gekochte Hirse daruntermischen.

Eine grosse Auflaufform einfetten und mit dem Gemuese belegen. Die
Hirse darueber verteilen, dann die Sauce darueber giessen. Nach
Belieben mit Kaese bestreuen und 20 Minuten ueberbacken.
