4 Pf. Pfirsiche; blanchiert
-- entsteint, in Scheiben
15 oz Weissweinessig
6 Getrocknete Chilischoten
1 ts Gewuerznelken
1 ts Pickles-Gewuerz
1 Stueck Zimt, 10 cm
1 1/2 Pf. Rohzucker, braun

Essig mit allen uebrigen Zutaten - ausser Pfirsichscheiben -
vermischen, bei kleinster Hitze ruehren, bis sich der Zucker
aufgeloest hat, dann aufkochen und 15 Minuten koecheln lassen.

Pfirsichscheiben zugeben, waehrend zwei weiteren Minuten koecheln
lassen. Pfirsichscheiben herausnehmen und in heiss gespuelten
Einmachglaeser tun.

Essigsud waehrend 10 Minuten kochen lassen, um es einzudicken. Dann
ueber die Pfirsichscheiben giessen und die Glaeser sofort
verschliessen.

Vor dem Gebrauch drei Wochen ruhen lassen.
