Menge: 4 Portionen

5 Eigelb
4 tb Zucker
1 Zitrone; Saft, Schale
1/4 l Weisswein; Riesling
6 tb Sherry

In der Fonduekachel auf ganz kleiner Hitze die Eigelb mit dem
Zucker schaumig schlagen. Abgeriebene Zitronenschale zugeben.
Kraeftig weiter schlagen und nach und nach Zitronensaft und Wein
zugiessen.

Ganz zum Schluss wird der Sherry eingeruehrt.
Die Weinschaumsauce muss fast steif werden. Servieren ueber einer
Kerze.

Beilagen
Trockener Kuchen aus Hefeteig oder Sandkuchen, Koenigskuchen,
Bisquit.

Der Kuchen wird in mundgerechte Stuecke geschnitten; jeder taucht
sie mit der Fonduegabel in die heisse Weinschaumsauce.
