1 Gramm Schnittlauch
etwas Tafelsalz
etwas weißer Pfeffer, frisch aus der Mühle
4 Esslöffel Obstessig (siehe Tipp)
1 Teelöffel Ahornsirup
10 Esslöffel Walnussöl
etwa 90 Gramm Sprossen (nach Geschmack)
1 grüne Paprika
1 rote Paprika
1 Chicoree
1 Kopf Endivie
2 Esslöffel Walnusskerne

Den Schnittlauch waschen, trockentupfen und in feine Röllchen
schneiden. Das Salz und Pfeffer mit dem Essig und dem Ahornsirup
verrühren. Zuletzt das Öl und dem Schnittlauch untermischen.
Die Sprossen mit kaltem Wasser abspülen und abtropfen lassen. Die
Paprika halbieren, vom Stielende, der weißen Haut und den Kernen
befreien und waschen. Das Fruchtfleisch würfeln.

Vom Chicoree den Strunk keilförmig herausschneiden. Die Blätter
ablösen, waschen und abtropfen lassen. Vom Endiviesalat die äußeren
Blätter entfernen. Die übrigen Blätter vom Strunk lösen, putzen,
waschen und abtropfen lassen, dann in etwa 1 Zentimeter breite Streifen
schneiden. Die Walnüsse grob hacken. Den Endivie in die Mitte
einer großen Glasschüssel häufen. den Rand mit den Chicoreeblättern
auskleiden. Die Paprikawürfel über den Salat streuen. Zuletzt die
Nüsse und die Sprossen über den Salat verteilen.

Das Dressing noch einmal durchrühren und über den Salat träufeln.
