1 Kopf Eichblattsalat
2 Bund Rauke
200 Gramm Cherrytomaten
1 Schalotte
2 Esslöffel Balsamessig
1/2 Teelöffel Aprikosenkonfitüre
1 Esslöffel Zitronensaft
1/2 Teelöffel Dijonsenf
Tafelsalz; schwarzer Pfeffer
2 Esslöffel Olivenöl
250 Gramm Mozzarella
1 Ei; (Größe M)
1/2 Bund frische Kräuter; (zum Beispiel
- Basilikum, Thymian)
4 Esslöffel Paniermehl (Semmelbrösel oder Panko-Mehl);
- bis die Hälfte mehr
2 Esslöffel Sonnenblumenöl

1. Salate waschen, putzen und in mundgerechte Stücke zupfen. Tomaten waschen
und vierteln. Schalotte schälen, fein hacken. Mit Essig, Konfitüre,
Zitronensaft, Senf, Salz und Pfeffer verrühren. Olivenöl darunterschlagen.

2. Mozzarella in etwa 1,5 Zentimeter dicke Scheiben schneiden. Ei, Tafelsalz
und Pfeffer verquirlen. Kräuter fein hacken. Mit Paniermehl (oder Pankomehl)
mischen. Käse erst in Ei, dann in Paniermehl wenden. Sonnenblumenöl in einer
beschichteten Pfanne erhitzen, Mozzarella darin portionsweise von beiden Seiten
etwa 2 Minuten knusprig braten. Auf Küchenpapier abtropfen lassen. Mozzarella,
Salate und Tomaten anrichten, mit Vinaigrette beträufeln.

Weiterer Tipp:
Pankomehl ist ein in der Sterneküche beleibtes japanisches Paniermehl, das aus Weizenmehl, Zucker, Salz, Hefe und pflanzlichem Öl besteht und anstatt von Paniermehl eingesetzt wird. Lebensmittel die mit diesem Mehl paniert werden knuspriger, lockerer und fluffiger. Als Alternative zu Pasnkomehl würden wir Ihnen allerdings empfehlen ein Vollkornbrötchen im 80 Grad Celsius (Oberhitze/Unterhitze) Vollkornbrötchen vom Bäcker (oder selbst gebacken) auf einer Küchenreibe fein zu reiben und diese Brösel zu verwenden!
