Mozzarella mit Roten Rüben

Menge: 4 Portionen

500 g Rote Rueben, klein
1 sm Gemuesezwiebel
150 g Mozzarella
1 bn Basilikum
4 tb Balsamico
;Salz
;Pfeffer f.a.d.M.
;Zucker
4 tb Olivenoel
40 g Parmesankaese
;Pfeffer, grob geschrotet

Rote Bete waschen und in Salzwasser 30 - 40 Minuten kochen. Abgiessen, mit
kaltem Wasser abschrecken, die Haut abziehen. Dann in Scheiben schneiden.

Gemuesezwiebeln schaelen, in feine Spalten schneiden. Mozzarella in duenne
Scheiben schneiden. Basilikum abbrausen, trockenschuetteln und die Blaettchen
abzupfen.

Essig mit Salz, Pfeffer, Zucker und Oel verruehren.

Rote Bete mit Zwiebel, Mozzarella und Basilikum auf einer Platte anrichten.
Das Dressing daruebertraeufeln. Parmesan darueberhobeln und mit grobem Pfeffer
bestreuen.
