Mozzarella-Tomaten-Salat mit Pesto

Menge: 4 Portionen

3 klein. Zucchini (ca. 300 g)
750 g Tomaten
2 Zwiebeln
2 Mozzarella (Ã 125 g)
1 bn Basilikum
2 tb Balsamessig (Aceto
-balsamico)
Salz
Pfeffer (a. d. Mühle)
4 tb Olivenöl

Zucchini und Tomaten waschen, putzen und in Scheiben schneiden.
Zwiebeln pellen und fein würfeln. Mozzarella abtropfen lassen
und ebenfalls in Scheiben schneiden.

Für das Pesto: Basilikumblätter von den Stielen zupfen, im
Universalzerkleinerer grob hacken und mit Essig, Salz, Pfeffer,
2 EL Wasser und Olivenöl mit dem Schnellmixstab des Handrührgeräts
fein pürieren. Tomaten, Zucchini und Mozzarella dachziegelartig
auf Tellern anrichten, mit Zwiebelwürfeln bestreuen und mit dem
Pesto servieren.
