Tortellinisalat mit Mozzarella

Menge: 4 Portionen

250 g Tortellini
4 Tomaten
2 Zucchini
1 gelbe Paprikaschote
1 grüne Paprikaschote
2 sm Zwiebeln
250 g Mozzarella (Rolle)
1 pk schwarze Oliven
8 tb Olivenöl
4 tb Weinessig
Salz
weißer Pfeffer aus der Mühle
1 Zweig Thymian

Tortellini nach der Vorschrift auf der Packung 'al dente' kochen,
abgießen, mit kaltem Wasser abschrecken, auskühlen lassen.
Tomaten waschen, halbieren, die Kerne und Stielansätze entfernen.
Tomaten dann in schmale Spalten schneiden. Zucchini waschen,
ungeschält in dünne Scheiben schneiden. Paprikaschoten waschen, in
dünne Ringe schneiden, dabei Kerne und Trennwände entfernen.
Zwiebeln häuten, in Ringe schneiden.
Mozzarella zunächst in Scheiben, dann in Würfel schneiden. Oliven
abtropfen lassen. Alle Salatzutaten mischen.
Aus Olivenöl, Essig, Salz, Pfeffer und Thymianblättchen eine
Vinaigrette anrühren, diese über den Torte@alat träufeln. Gut
durchziehen lassen.
