20 Gramm Feine Haferflocken
15 Gramm Dinkel-Mehl

etwas Tafelsalz
1 Teelöffel Olivenöl
125 Milliliter Vollmilch
2 große Hände voll Brennesel-Spitzen
Oder junge Blättchen
Oder
300 Gramm Blattspinat

50 Gramm Sauerrahm (20% Fett)
40 Gramm Vollmilchjoghurt
1 Esslöffel Hefe-flocken
etwas Pfeffer frisch aus der Mühle
etwas Muskat
etwas Kräuter-salz

Brenneseln sind mit das erste frische Gemüse im Jahr und sehr reich
an Eisen und Vitamin C. Achten Sie darauf, nur an sicheren Orten zu
sammeln: am besten in privaten Gärten an Stellen, die nicht von
Hunden "besucht" werden. Falls Sie keine Brenneseln sammeln können,
nehmen Sie Spinat.

Die Haferflocken mit Mehl, dem Ei, etwas Salz und Olivenöl verrühren.
So viel Milch zugeben, dass ein dünn-flüssiger Teig entsteht. Etwas
quellen lassen. Die Brenneseln bzw. den Spinat waschen und putzen.
Das Olivenöl in einer Pfanne erhitzen und 1 Pfannkuchen backen.
Währenddessen die Brenneseln oder den Spinat in einem Topf
zusammenfallen lassen. Den Sauerrahm, Joghurt und die Hefe-flocken
unterrühren, mit den Gewürzen kräftig abschmecken. Den Pfannkuchen
mit der Creme füllen, zusammenklappen und servieren.

Unser Tipp: Als Füllung eignen sich auch Sauerampfer und Löwenzahn
frisch von der Wiese oder Kerbel und Brunnenkresse vom Markt. Mischen
Sie diese Kräuter enthalten Mineralstoffe, Vitamine und Aromastoffe
besonders konzentriert.
