Auberginen-Soße mit Mozzarella

Menge: 4 Portionen

2 Fleischtomaten (600 g)
2 Auberginen (500 g)
4 tb Öl mit Basilikum (Basilico)
1 Zweig Rosmarin
1 Knoblauchzehe
1 Chilischote, getrocknete
1/8 l Weißwein
Pfeffer
Salz
1 Mozzarella-Käse (125 g)
1 bn Petersilie
100 g Parmesankäse, gerieben

Außerdem

400 g Spaghetti

1. Fleischtomaten häuten, würfeln. Auberginen putzen, waschen,
würfeln und im heißen Öl 3-4 Minuten anbraten. Rosmarinnadeln kurz
mitbraten. Knoblauch abziehen und dazudrücken.

2. Tomaten, zerbröselte Chilischote und Wein zugeben, würzen, 5-7
Minuten kochen lassen. Inzwischen Nudeln kochen.

3. Mozzarella würfeln. Petersilie waschen, trockentupfen, hacken.
Mozzarella, Petersilie und Parmesankäse in die Soße geben,
abschmecken. Mit den Spaghetti anrichten.
