100 g Mehl
Salz
1/4 l Weisswein
2 tb Olivenoel
1 Eiweiss
50 g Mozzarella
1 Anchovisfilet, je Bluete
Olivenoel zum Ausbacken.

Die Staubgefaesse entfernen und die Blueten waschen. Aus Mehl,
Salz, Oel und Wein einen Ausbackteig mischen.

Eischnee drunterheben. Die Blueten mit einem Stueck Kaese und einer
Sardelle fuellen, durch den Teig ziehen und in dem heissen Oel ausbacken.
