300 g Mehl
Mehl zum Bestaeuben
20 g Hefe, frisch
1 ts Zucker
Salz
1/8 l Olivenoel
2 Knoblauchzehen
8 Salbeiblaetter
150 g Mozzarella
100 g Junger Pecorino
100 g Gorgonzola
100 g Parmesan (im Stueck)

Das Mehl in eine Schuessel schuetten, in die Mitte eine Mulde
druecken. Die zerbroeckelte Hefe und den Zucker in 1/8 l lauwarmem
Wasser aufloesen und in die Mulde giessen.
Die Hefemischung mit etwas Mehl vom Rand bedecken und ca. 10 Minuten
gehen lassen. Dann alle Zutaten vom Rand zu einem Teig verarbeiten,
dabei das Salz und etwa 2/3 des Oels unterarbeiten. Den Teig dann auf
der bemehlten Arbeitsflaeche weiterkneten, bis er glatt ist und
glaenzt. Eine Kugel formen und zugedeckt etwa 30 Minuten gehen lassen.
Inzwischen den Knoblauch in sehr duenne Scheiben schneiden. Die
Salbeiblaetter laengs halbieren. Mozzarella, Pecorino und Gorgonzola
fein wuerfeln, den Parmesan fein reiben. Den Teig nochmal kraeftig
durchkneten, wieder eine Kugel formen. Diese in 4 Teile schneiden.
Aus jedem Stueck eine Kugel formen, dann auf der bemehlten
Arbeitsflaeche 1/2 cm dick rund ausrollen und auf ein mit Mahl
bestaeubtes Backblech legen. Den Backofen auf 225oC vorheizen.
Knoblauch, restliches Oel, Kaese und Salbei auf den Teigplatten
verteilen. Das Blech auf der untersten Schiene in den Ofen setzen.
Die Pizze 15 - 18 Minuten backen. Die Unterseite muss goldbraun sein.
Sofort heiss servieren.
