Aprikosen-Melonen-Konfitüre

Menge: 6 Gläser

1 kg Aprikosen
200 g Honigmelone
400 g Akazienhonig
1 Beutel Gelfix (zwei und
-eins)
einige Blättchen
-Zitronenmelisse

Aprikosen überbrühen und abziehen, entsteinen und in Würfel
schneiden. Die Kerne der Melone mit einem Eßlöffel herauskratzen.
Mit einem Kugelausstecher kleine Kugeln aus dem Fruchtfleisch
stechen oder würfeln. Früchte und Honig mit Gelfix in einem großen
Topf verrühren. Auf großer Gasflamme zum Kochen bringen. In Streifen
geschnittene Zitronenmelisse dazugeben und 1 Minute sprudelnd kochen
lassen. Die Konfitüre in vorbereitete Twist-Off-Gläser füllen und
sofort verschließen.
