Aprikosen-Möhren-Konfitüre

Menge: 2 Gläser

350 g entsteinte Aprikosen
150 g Möhren
1 Zitrone (Saft und Schale)
300 g Zucker (- 400)

Aprikosen in kleine Stücke schneiden, Möhren mit dem Schnitzelwerk
raspeln. Alle Zutaten vermischen, 2 - 3 Stunden zugedeckt stehen
lassen.

Danach in einem weiten Topf auf 3 oder Automatik-Kochplatte 4 - 5
unter Rühren zum Kochen bringen, auf 1 zurückschalten, unter ständigem
Rühren in 1 2 - 1 5 Min. zum Gelierpunkt kochen.

Kochendheiße Konfitüre in vorbereitete Gläser füllen, mit einem
Twist-off-Deckel sofort verschließen, kurz auf den Kopf stellen und
auskühlen lassen.
