Quitten-Marmelade

Menge: 5 Gläser

1 1/2 Kilogramm Quitten
gut 1/4 Liter Wasser
1 1/2 Kilogramm Gelierzucker
4 Teelöffel kristallisierte Zitronensäure

Quitten mit einem Tuch abreiben, um den Flaum zu entfernen. Früchte unter
kaltem Wasser gründlich bürsten. Abtropfen lassen und ungeschält in Achtel
schneiden. Dabei Stiele und Blütenansätze entfernen.

Quitten mit Wasser in einem großen Topf zugedeckt 30 Minuten kochen lassen.
Durch ein Sieb streichen. Mus wieder in den Topf geben. 10 Minuten unter
Rühren kochen lassen. Dann den Zucker und die Zitronensäure hineinrühren
und weitere 10 Minuten kochen lassen. Dabei stets umrühren. Marmelade in Gläser
füllen und verschließen.
