Crepes-Torte mit Blattspinat, Champignons und Tomaten

Menge: 4 Portionen

250 g Blattspinat
1 Knoblauchzehe
4 tb Oel
;Salz
250 g Champignons
2 tb Creme fraiche
1 kg Tomaten
1 bn Basilikum
100 g Mehl
2 Eier
1/4 l Milch
300 g Mozzarella

Spinat und Knoblauch in 1/4 des Oels zusammenfallen lassen, salzen,
gut ausdruecken. Pilze putzen, waschen, in Scheiben schneiden, bei
starker Hitze in 1/4 des Oels braten, Creme fraiche zugeben, salzen.
Tomaten in Scheiben schneiden, Basilikum in Streifen. Aus Mehl,
Eiern, Milch und Salz einen Teig ruehren, im restlichen Oel pro
Portion eine Crepe backen. Mit dem Gemuese zu einer Torte schichten,
mit Mozzarella bedecken und im Ofen ueberbacken.
