1 kg Kartoffeln
3 Eier
100 g Mehl
Semmelbroesel
1 Zwiebel
Salz
Schmalz

Die geschaelten und gewaschenen Kartoffeln grob reiben und in einem
sauberen Tuch gut ausdruecken. Die Fluessigkeit auffangen (Schuessel?) und
dann die darin abgesetzte Kartoffelstaerke zu den geriebenen Kartoffeln
geben. Eier, Mehl, Semmelbroesel und Salz, evtl. noch die geriebene
Zwiebel dazugeben und alles gut vermischen. In einer Pfanne das Schmalz
erhitzen und darin die Backers von beiden Seiten goldbraun braten.
Sie sollten ganz duenn (und moeglichst rund) sein - dann
schmecken sie am besten.

Als Beilage eignet sich Apfelmus.
