1 Blumenkohl
Salzwasser
1 Unbehandelte Zitrone
2 tb Butter oder Margarine
1 c Gemuesebruehe
1/4 l Gebundene helle Sosse
2 tb Creme fraiche
Salz
Weissen Pfeffer
1 Prise Muskatpulver
Etwas Zitronensaft
75 g Gekochten Schinken
125 g Geriebenen Emmentaler Kaese
3 tb Gehackte Petersilie


1. Den Blumenkohl putzen, die aeusseren Blaetter abschneiden und
anschliessend den Kopf vierteln.

2. Die Blumenkohlviertel erneut putzen, waschen und den Strunk kreuzweise
einschneiden.

3. Salzwasser in eine Schuessel geben. Die Zitrone halbieren, ausdruecken
und den Saft in das Salzwasser giessen.

4. Die Zitronenhaelften mit den Blumenkohlvierteln in das Wasser legen
und etwa 10 Minuten darin liegen lassen.

5. Anschliessend den Blumenkohl nochmals unter fliessendem Wasser
abwaschen und gut abtropfen lassen.

6. Die Blumenkohlviertel mit der Butter oder Margarine und der Gemuese-
bruehe in ein mikrowellengeeignetes Geschirr legen.

7. Bei 600 Watt Leistung 12-15 Minuten garen.

8. Die gebundene helle Sosse mit der Creme fraiche anruehren.

9. Die Blumenkohlviertel mit Salz, Pfeffer, Muskat und Zitronensaft
wuerzen und mit der hellen Sosse ueberziehen.

10. Den in feine Streifen oder Scheibchen geschnittenen Schinken auf den
Blumenkohlvierteln verteilen.

11. Den Emmentaler Kaese darueberstreuen und bei 600 Watt Leistung weitere
5-6 Minuten garen.

12. Nach Ende der Garzeit die Blumenkohlviertel anrichten, mit Petersilie
bestreuen und servieren.
