1 kg Tomaten
500 g Gemuesezwiebeln
Salz
Pfeffer
200 ml Olivenoel
1 bn Petersilie, glatte

Kartoffeln schaelen und vierteln, Paprikaschoten putzen, vierteln, in
Stuecke schneiden. Tomaten haeuten, sechsteln. Gemuesezwiebeln laengs
vierteln, in Streifen schneiden.

Alles in einen Topf geben, salzen, pfeffern und mit Oel begiessen.
Zugedeckt bei milder Hitze 45 Minuten garen. Mit einer Schaumkelle
herausnehmen. Sud 5 - 10 Minuten einkochen, dann uebers Gemuese geben.
Mit Salz und Pfeffer abschmecken. Mit gehackter Petersilie bestreuen,
lauwarm zum 'Bollito misto' servieren.
