Bohnenauflauf mit Maiskruste

200 g Rote Bohnen
700 ml ; Wasser (1)
1 Lorbeerblatt
150 g Maisgries; grob
400 ml ; Wasser (2)
1 tb Gekoernte Gemuesebruehe
1 ts Kurkuma
6 tb Creme fraiche
50 g Greyerzer oder alter Gouda
- fein gerieben
- Jodmeersalz
- schwarzer Pfeffer
6 Salbeiblaetter
3 ts Rosmarinnadeln
4 ts Frische Thymianblaettchen
200 g Kleine Zwiebeln
350 g Gruene Paprikaschoten
1 sm Rote Chilischote
2 Knoblauchzehen
2 tb Olivenoel; kalt gepresst
2 tb Tomatenmark
4 tb Aceto Balsamico (Balsamessig
; Cayennepfeffer

Die Bohnen in dem Wasser (1) ueber Nacht quellen lassen. Danach das
Lorbeerblatt dazu geben und die Bohnen in etwa 1 1/2 Stunden weich
kochen. Dann auf einem Sieb abtropfen lassen und die Bruehe auffangen.
Das Lorbeerblatt entfernen.

Den Maisgries mit dem Wasser (2), der gekoernten Bruehe und dem Kurkuma
unter gelegentlichem Umruehren zu einem dicken Brei kochen. 1/3 der
Creme fraiche und den Kaese unterruehren. Mit Salz und Pfeffer
abschmecken.

Saemtliche Kraeuter fein hacken. Die Zwiebeln schaelen, halbieren und
laengs in spalten schneiden. Die Paprikaschoten vierteln, entkernen
und laengs in Streifen von etwa 1 x 4 cm schneiden.

Die Pfefferschote aufschlitzen. Die weissen Innenwaende und die Kerne
entfernen. Die Schote abspuelen und sehr fein wuerfeln.

Den Knoblauch sehr fein hacken. Das Oel und 2 El. Bohnenbruehe in einer
Pfanne erhitzen. Das Gemuese, die Chilischote und den Knoblauch unter
Wenden darin anduensten. Noch 8 El. Bohnenbruehe und die Kraeuter
dazugeben. Das Gemuese in 3-5 Minuten knapp bissfest garen.

Inzwischen das Tomatenmark mit 4 El. Bohnenbruehe, dem Aceto balsamico
und der restlichen Creme fraiche verruehren. Die Mischung zum Gemuese
geben. Die Bohnen zufuegen. Mit Salz und evtl. etwas Cayennepfeffer
scharf pikant abschmecken.

Den Backofen auf 200 Grad vorheizen.

Das Bohnengemuese in eine auflaufform fuellen. Den Maisbrei in einen
Spritzbeutel mit grosser Sternhuelle fuellen und ein Muster auf das
Bohnengemuese spritzen. Auf der mittleren schiene 20-25 Minuten
backen, bis der Mais goldgelb ist.
