1 Esslöffel Kürbiskerne
2 Esslöffel Frischkäse (60 Gramm); körnig
3 Teelöffel Tomatenmark
200 Gramm Chinakohl; große Blätter
; Petersilie
; Salz, Essig
1 Tasse Gemüse-Hefebrühe
1 Lauchzwiebel
125 Gramm Champignons
1 kleine Peperoni; scharf
5 Esslöffel Buchweizen; 50 Gramm Ganzkorn
Pfeffer; schwarz, frisch

1. Wasser mit Salz und einem Schuss
Kohlblätter knapp 1 Minuten kochen, mit einer Schaumkelle herausnehmen
und abtropfen lassen.

2. Halben Bund Petersilie und die Kürbiskerne hacken und mit dem
Frischkäse und Tomatenmark verrühren. Kräftig mit etwas geriebener
Zitronenschale, Paprika und Salz würzen nach Belieben.
Für 2 bis 3 Rouladen die Kohlblätter überlappend aufeinanderlegen
und die Paste drauf-streichen. Blätter aufrollen und eventuell mit
einem Faden umwickeln.

3. Bratpfanne erhitzen, mit Öl einpinseln und die Rouladen rundum
anbraten. Halbe Tasse Brühe dazu gießen und abgedeckt 20 Minuten bei
geringer Hitze schmoren. Zuviel Flüssigkeit zum Schluss offen
verdampfen lassen.

4. Lauchzwiebel in Ringe schneiden, Champignons kleinschneiden,
Peperoni hacken. Einen Topf erhitzen und den Buchweizen kurz ohne
Fett anrösten. Champignons und Zwiebelringe nach 1 Min. zufügen und
kurz mitbraten. Restliche Brühe zugießen und bei geringer Hitze 15
Min. garen, zwischendurch umrühren und eventuell etwas Wasser zugeben.

5. Buchweizen-Gemüse mit Pfeffer würzen und mit den Rouladen auf
einen Teller geben. Mit der restlichen Petersilie bestreuen.

Fettgehalt pro Portion ca. 13 Gramm.
