(gewaschen und abgetrocknet)
Pflanzenöl zum Frittieren
25 Gramm blanchierte Mandel-flocken
etwas Meersalz
2 Teelöffel Puderzucker

etwas Küchenpapier

Zu dem authentischen Gericht der nördlichen Regional-Küche wird
eine besondere Sorte von Seegras verwendet, die hier nicht
erhältlich ist. Die in diesem abgewandelten Rezept verwendeten
Zutaten ergeben jedoch ein ähnlich köstliches Gericht.

Ausreichend für 6 Personen

Die harten Strünke der Kohlblätter herausschneiden.
Jeweils einige Blätter zusammenrollen und quer in möglichst
dünne Streifen schneiden. Auf Küchenpapier auslegen, damit sie
noch trocknen können. Je trockener die Kohl-Streifen sind, desto
knuspriger werden sie, ohne ihre frische grüne Farbe zu
verlieren (die Blätter können einige Stunden vorher geschnitten
werden).

Die Wok zur Hälfte mit Öl füllen und auf 200 Grad erhitzen. Die
Hälfte der geschnittenen Kohlblätter hineingeben und 2 Minuten
frittieren. Sie werden dann knusprig und in der Farbe dunkler
sein. Mit der Schaumkelle herausholen und auf Küchenpapier
abtropfen lassen. Die zweite Hälfte frittieren.

Die Blätter etwas abkühlen lassen, dann auf eine Platte geben.
Mit dem Salz bestreuen und durchmischen, dann den Zucker
darübersieben und gut mischen. Mit den Mandeln garnieren und
lauwarm servieren. Die Blätter bleiben auch über Nacht
knusprig. Bitte nicht in den Kühlschrank stellen!
