Gebratene Auberginenscheiben (Melitsanes tighanites)

Menge: 4 Portionen

2 lg oder 4 kleine Auberginen
etwa 1 Tassse Mehl zum
- Panieren
reichlich Olivenoel zum
- Braten

Die Auberginen in gleich dicke Scheiben schneiden und von beiden
Seiten in Oel wenden. Das Olivenoel erhitzen. Die Auberginenscheiben
kurz in kaltes Wasser tauchen, sofort in das heisse Oel geben und von jeder
Seite etwa 5 Min. goldgelb braten. Auf Kuechenkrepp abtropfen lassen und heiss
servieren.

Variante:
Nicht in Mehl wenden sondern in einem Teig aus 1 Tasse Wasser, 3 EL Mehl,
1 EL Parmesankaese, 1 Ei und etwas Salz.
