1 kg Gemischtes Hack
2 Zwiebeln
1 Stange Lauch
1 Bd. Petersilie
1 Ei
1 Broetchen; eingeweicht
1 Knoblauchzehe
-Salz
-Pfeffer

Specksauce

250 g Magerer Speck
1 lg Zwiebel

Fuer die Fuellung alle Zutaten sehr fein gehackt mischen.

Aus dem Teig handgrosse fingerdicke Platten formen, darauf die
Fuellung (Kugel von 5 cm Durchmesser) legen. Die 2. Platte
darueberlegen, Raender fest andruecken und zu einem runden Kloss
formen. Die Kloesse in kochendes Salzwasser gleiten lassen, die Hitze
sofort reduzieren, die Kloesse ziehen lassen (Garzeit 30 Minuten).

Fuer die Specksosse den Speck zerlassen, die kleingehackte Zwiebel
darin schmoren. Der gare Kloss wird halbiert, die Sosse
daruebergegeben.
