Gefüllte Tomaten (mit Mettwurst und Schafkäse)

Menge: 4 Portionen

4 Fleischtomaten a ca. 250 g
150 g Mettwurst in dicken Scheiben
200 g Schafskaese
1 Bd. Fruehlingszwiebeln
85 g Glas schwarze Oliven
2 tb Weissweinessig
;Salz
;Pfeffer a.d.Muehle
4 tb Oel

Tomaten waschen und jeweils einen Deckel abschneiden. Tomateninneres
mit einem Loeffel herauskratzen und durch ein Sieb streichen.

Mettwurst und Schafskaese fein wuerfeln. Fruehlingszwiebeln putzen,
waschen und in Ringe schneiden. Oliven in Spalten vom Stein
schneiden.

Tomateninneres mit Essig, Salz, Pfeffer und Oel verruehren. Wurst,
Kaese, Fruehlingszwiebeln und Oliven mit der Sauce mischen. Tomaten mit
der Mischung fuellen, Deckel vor dem Servieren wieder dazulegen.
