- Staudensellerie
2 Schalotten
2 Knoblauchzehen
500 g gekeimte Mungobohnen
2 tb Maiskeimoel
350 g Joghurt
1/2 ts Gelbwurz (Kurkuma)
Kreuzkuemmel (Kumin)
1/2 ts gemahlener Koriander
1/2 ts gemahlener Kuemmel
1/4 ts Cayennepfeffer
1/2 Zitrone
Salz
2 tb gehackte Petersilie


Den abgetropften Tofu in Wuerfel von 1 cm Kantenlaenge schneiden. Die
Tomaten haeuten und achteln. Den Lauch und den Sellerie putzen und in
2 cm breite Stuecke schneiden. Die Schalotten halbieren, die Knoblauch
hacken. Die Mungosprossen abspuelen.

Das Oel in einem Schmortopf erhitzen. Den Tofu darin rundherum
anbraten. Die Schalotten und den Knoblauch hinzufuegen und nur kurz
mitbraten. Die Gemuese, die Sprossen, den Joghurt und dir Gewuerze
daruntermischen. Alles einmal aufkochen und zugedeckt bei schwacher
Hitze 10 Minuten garen. Inzwischen von der Zitrone ein hauchduennes
Stueck Schale abschneiden und in feine Streifen schneiden. die Zitrone
auspressen. Das Curry mit Salz und dem Zitronensaft abschmecken, mit
der Zitronenschale und der Petersilie bestreuen und servieren.
