Gemüsefrikadellen mit Tofu

Menge: 2 Portionen

1 Sellerieknolle (etwa 350 Gramm)
200 Gramm Möhren
200 Gramm Lauch (Porree)
1 Zwiebel
2 Knoblauchzehen
1 Bund Petersilie
100 Gramm Tofu
2 Eier (Größe M)
5 Esslöffel Vollkornbrot oder Schwarzbrot,
- fein-gerieben
Tafelsalz
weißer Pfeffer, frisch
- gemahlen
6 Esslöffel Öl zum Braten

Den Sellerie und die Möhren schälen und unter fließendem kalten
Wasser waschen. Beide Gemüse abtrocknen und auf der Gemüse-reibe
fein-raffeln. Den Lauch putzen, die ganze Stange längs kreuzweise
durchschneiden und waschen. Den Lauch quer in dünne Scheibchen teilen
und dabei etwa zwei Drittel des Lauchgrün mitverwenden.

Das zerkleinerte Gemüse in ein Geschirrtuch geben und sehr gut
auspressen. Die Zwiebel und die Knoblauchzehen schälen und fein-hacken.
Die Petersilie waschen, die Blättchen abzupfen, trocken tupfen und
ebenfalls fein hacken.

Den Tofu abtropfen lassen und würfeln oder zerdrücken.
Alle diese Zutaten in eine Schüssel geben und mit den Eiern und dem
geriebenen Brot zu einem festen, aber geschmeidigen Teig mischen, der
sich gut formen lässt. Den Gemüse-Teig mit Salz und Pfeffer
abschmecken und zugedeckt 10 Minuten ruhen lassen.

Aus dem Teig mit angefeuchteten Händen Frikadellen formen. Etwa die
Hälfte des Oels in einer Pfanne stark erhitzen. Die Gemüsefrikadellen
darin bei starker bis mittlerer Hitze etwa 10 Minuten braten und dabei
einmal wenden. Zwischendurch vom Rand der Pfanne her Öl dazu gießen.
Dazu schmeckt gemischter Salat mit Sonnenblumenkernen.
