Gemüse mit Cashew-Kernen

Menge: 1-2 Portionen

1 Zwiebel
1 grüne Paprikaschote
1 Lauchstange
2 sm Zucchini
2 tb Ghee
150 g Cashew-Kerne
1 ts Cumin; frisch zerstoßen
; Meersalz

Zwiebel fein hacken. Paprika in dünne Streifen, Lauch und Zucchini in dünn
Scheiben schneiden.

In einer Pfanne (mit Deckel) Ghee erhitzen, zuerst Zwiebel, Paprika und
Lauch andünsten. Durchrühren und zugedeckt bei mittlerer Hitze 2 bis 3
Minuten dünsten.

Nun die Zucchini und Cashew-Kerne zugeben, mit Cumin und Meersalz
abschmecken.
