3 Tomaten (Roma-Tomaten)
1 Zucchini
1 Fenchelknolle
oder 1 Staudensellerie
2 Knoblauchzehen
1 Päck. Erdnüsse
Olivenöl
1 Stück Parmesan- oder
-Schafskäse

Auberginen in Scheiben schneiden, salzen, ziehen lassen, abtupfen,
pfeffern und in Olivenöl in einer Gußpfanne anbraten. Paprika und Zwiebeln
in Streifen schneiden, Tomaten, Zucchini und Fenchel in Scheiben schneiden,
salzen, pfeffern, in der gleichen Pfanne mit dem zerdrückten Knoblauch kurz
anbraten. Alle Sorten vermischen, Erdnüsse darüber streuen. Nach Geschmack
frischen Parmesankäse raffeln oder Schafskäse zerbröseln und über das heiße
Gemüse geben.
