Menge: 4 Portionen

1.5 Kilogramm frischer Grünkohl
2 Zwiebeln
1 Esslöffel Schweineschmalz
350 Gramm Räucherspeck, durchwachsen
2 Esslöffel Hafergrütze oder
- Schmelz-flocken
350 Gramm geräucherte Mett-Würstchen
750 Gramm kleine Kartoffeln
1 Esslöffel Butter oder Margarine
1 Esslöffel Zucker, Senf
Salz
Pfeffer, schwarz
1 Spur Zimt
1 Spur Piment; gemahlen

Frischer Grünkohl ist Bitter, deshalb müssen Sie ihn erst in klarem Wasser einmal aufkochen
lassen und das Wasser dann weg kippen !

Grünkohl verlesen, grobe Stücke entfernen. Grünkohlblätter
mehrmals in stehendem Wasser waschen, dann abtropfen lassen.
4 Liter Wasser aufkochen, Grünkohl in 2-3 Portionen je 5 Minuten
blanchieren. Kohl wieder gut abtropfen lassen, dann mit einem
Wiegemesser oder einem großen Küchenmesser grob hacken.

Die Zwiebeln schälen und fein würfeln. Den Schmalz in einem
großen Topf erhitzen, die Zwiebelwürfel darin glasig dünsten.
Grünkohl, Speck und knapp 1/2 Liter Wasser hinzufügen. Bei mittlerer
Hitze zugedeckt eine Stunde kochen lassen. 10 Minuten vor Ende der
Garzeit den Kohl mit Salz, Pfeffer, Zimt und Piment abschmecken,
dann Hafergrütze einrühren und die Würstchen zufügen.

In der Zwischenzeit die Kartoffeln in der Schale garen, dann
abgießen, schälen. Fett in einer Pfanne erhitzen, Zucker darin
hellbraun werden lassen. Die Kartoffeln zufügen und unter ständigem
rütteln der Pfanne rundherum goldbraun braten.

Den Speck aus dem Grünkohl nehmen und in dünne Scheiben schneiden.
Speck und Wurst auf dem Grünkohl anrichten. Mit den Kartoffeln und mit
Senf servieren
