1 bn Möhren
1/8 l Gemüsebrühe
1 ts Zucker
Salz
4 tb Essig
500 g Brechbohnen
1 cn rote Bohnen
1 cn weiße Bohnen

Für die Marinade:

1/8 l Olivenöl
4 tb Weinessig
2 Knoblauchzehen, durchgepreßt
1 Zwiebel, gehackt
Salz
Pfeffer aus der Mühle

Für die Tomaten m.Mozarella:

500 g Tomaten
300 g Mozzarella
Basilikum
grüner Salat
5 tb Olivenöl
150 g schwarze Oliven
1 Zwiebel


Möhren schälen und schräg in daumendicke Scheiben schneiden. In 1/8 l
Gemüsebrühe mit Zucker, Salz und Essig etwa 10 Minuten dünsten. Die Bohnen
putzen, waschen und in leicht gesalzenem Wasser etwa 15 Minuten kochen.
Abgießen. Die roten und weißen Bohnen abtropfen lassen. Aus den angegebenen
Zutaten eine Marinade rühren und die Gemüse getrennt darin marinieren. Mind.
2 Stunden durchziehen lassen. Tomaten und Mozzarella in Scheiben schneiden
und mit Basilikum auf einer mit Salatblättern ausgelegten Platte anrichten.
Salzen, pfeffern und mit Olivenöl beträufeln. Mit Bohnen und Möhren
anrichten, mit Oliven und Zwiebelringen dekorieren.
