1/2 l Gemuesebruehe
1 Zwiebel
40 g Butter oder Margarine
125 g Rinderhackfleisch
; Pfeffer
Muskat
1 Ei
1 bn Petersilie
100 g Sauerrahm (20 % Fett)

QUINOA ALS BEILAGE


200 g Quinoa
400 ml Bruehe

Die Paksoi- oder Mangoldblaetter abtrennen, waschen, putzen und die
Mittelrippe herausschneiden. Die Blaetter in reichlich kochendem
Salzwasser einmal aufkochen lassen, dann mit kaltem Wasser
abschrecken, auf sauberen Kuechentuechern ausbreiten.

Quinoa mit 1/4 der Gemuesebruehe aufkochen, bei kleiner Hitze 10
Minuten quellen lassen. Zwiebel abziehen, fein hacken, in der Haelfte
Fett anbraten. Das Hackfleisch zugeben, kraeftig wuerzen und braun
braten. Mit Quinoa mischen, mit den Gewuerzen abschmecken, Ei
unterziehen. Die Masse auf den Blaettern verteilen, zusammenrollen,
dabei die Enden einschlagen.

Die Paksoi- oder Mangoldstiele in feine Streifen schneiden. Im
restlichen Fett anduensten, uebrige Bruehe angiessen und die
Roellchen obenauf setzen. Bei kleiner Hitze 20 Minuten duensten. Dann
die Roellchen herausheben. Die Petersilie waschen, Blaettchen
abzupfen und zum Stielgemuese geben. Mit dem Puerierstab cremig
puerieren, zum Schluss den Sauerrahm zugeben und abschmecken. Die
Roellchen nochmal darin heiss werden lassen, in der Rahmsauce
servieren.

Dazu passen Quinoa (in der Bruehe 15 Minuten kochen) oder
Salzkartoffeln.
