Grünkohl mit Eiern und Speck

Menge: 6-8 Portionen

1000 Gramm tiefgekühlten oder
2000 Gramm frischer Grünkohl
2 Liter Wasser
100 Gramm durchwachsener Speck
2 Zwiebeln (100 Gramm)
gute 1/4 Liter heiße
- Gemüsebrühe aus Würfeln
Pfeffer
1 Prise Muskat
1 Kartoffel (100 Gramm)
40 Gramm Schinkenspeck
4 Eier

Frischer Grünkohl ist Bitter, deshalb müssen Sie ihn erst in klarem Wasser einmal aufkochen
lassen und das Wasser dann weg kippen !

Grünkohl putzen. Waschen. Von den dicken Stielen streifen.
(Tiefgekühlten Grünkohl nach Vorschrift zubereiten.) Wasser in einem
großen Topf aufkochen. Salzen. Kohl 10 Minuten darin kochen. Auf
Sieb abtropfen lassen, hacken.

Speck würfeln. In einem Topf glasig werden lassen. Zwiebeln schälen.
Fein hacken. Im Speck glasig werden lassen. Kohl rein geben. Unter
Rühren 5 Minuten durchschwitzen lassen. Mit heißer Gemüsebrühe
aufgießen. Mit Salz, Pfeffer und Muskat würzen. Etwa 60 Minuten
leise kochen. In einer Schüssel warm stellen.

Schinkenspeck in dünne Scheiben schneiden. In einer Pfanne
auslassen. Eier aufschlagen. Draufgleiten lassen. Salzen. Etwa
6 Minuten stocken lasen. Auf dem Grünkohl anrichten.

Beilage: Bratkartoffeln. Als Getränk Bier. Und zur besseren
Verträglichkeit gibt es nach dem Essen einen Klaren.
