1 Kilogramm Grünkohl
30 Gramm Butter oder Margarine
2 Zwiebeln
1/2 Liter Gemüsebrühe
2 Kartoffeln
2 Esslöffel Haferflocken
Salz
Pfeffer
Sojasauce
150 Gramm Grünkernschrot
1 Stückchen Sellerie
1 Ei
30 Gramm Frisch geriebenen Parmesan
1 Knoblauchzehe
1 Esslöffel Gehackte Petersilie
Fett; zum Ausbacken

Frischer Grünkohl ist Bitter, deshalb müssen Sie ihn erst in klarem Wasser einmal aufkochen
lassen und das Wasser dann weg kippen !

Auch vegetarische Küche kann deftig-kräftig schmecken! Zwiebeln,
Knoblauch, rauchiger Grünkern und Grünkohl haben ein natürlich
pikantes Aroma, das im Winter besonders gut schmeckt.

Grünkohl waschen, die Blätter von den Strünken streifen und in feine
Streifen schneiden. Zwiebeln abziehen und fein würfeln, im Fett kräftig
anbraten. Grünkohl zugeben und würzen. Mit der Hälfte der Gemüsebruehe
ablöschen und in etwa 1 Stunde gar kochen. Kartoffeln schälen, in 1 Zentimeter
große Würfel schneiden und die letzten 20 Minuten mitkochen. Kohl mit
Haferflocken binden. Für die Küchlein Sellerie schälen und fein
reiben. Die restliche Brühe zum Kochen bringen, Sellerie und
Grünkernschrot einstreuen und 5 Minuten kochen. Abkühlen lassen, dann
das Ei, den Käse, die mit Salz und einer Gabel zerdrückten
Knoblauchzehe und die Petersilie unterziehen, abschmecken. Mit
bemehlten Händen 8 kleine Küchlein formen. In einer beschichteten
Pfanne rundherum ausbraten und zum Grünkohl reichen.

Wenn Sie es nicht eilig haben, formen Sie aus dem Teig kleine
Würstchen.
