Grünkohl mit Schweinebacke

Menge: 6-8 Portionen

750 Gramm Schweinebacke oder
- Zungenwurst
3/4 Liter Wasser
2 Kilogramm geputzter Grünkohl
125 Gramm Schmelzflocken
Zucker
Salz

Frischer Grünkohl ist Bitter, deshalb müssen Sie ihn erst in klarem Wasser einmal aufkochen
lassen und das Wasser dann weg kippen !

Wenn der erste Frost über das Land an der Küste zieht, beginnt die
Grünkohl- oder, wie die Bremer oder Oldenburger sagen, die
Braunkohlzeit. Dann nämlich werden die krausen Blätter dieses nicht
überall geschätzten Kohls tüchtig gezwackt, was ihm einen leicht
süßen Geschmack verleiht. Gerade richtig für die Friesen, die ja das
Süße lieben. Gewaltige Grünkohlessen finden dann statt, auf denen
nach dem Motto "Solang de Buuk(Bauch) in de West noch passt" gegessen
wird. Bier und Korn dürfen bei einem solchen Essen auf keinen Fall
fehlen.

Die Schweinebacke oder Zungenwurst in 3/4 Liter Wasser 45 Minuten
lang kochen. Den geputzten Grünkohl in die Brühe geben und das Ganze
weitere 1 1 1/2 Stunden kochen. Den Kohl aus dem Topf nehmen und ihn
entweder hacken oder fein schneiden. Zuerst mit den Schmelzflocken die
Brühe binden, dann den Kohl hinzufügen und 10 Minuten kochen lassen.
Mit Zucker und Salz ab schmecken. Das Fleisch aus dem Topf nehmen und
in Scheiben schneiden. Dazu süße runde Bratkartoffeln reichen.
