Himmel und Erde mit Petersilienzwiebeln

Menge: 4 Portionen

500 Gramm Festkochende Kartoffeln
Tafelsalz
450 Gramm Boskop-Äpfel
250 Gramm Zwiebeln
1 Bund Petersilie
3 Esslöffel Sonnenblumenöl

Kartoffeln schälen und würfeln. In Salzwasser etwa 10 Minuten kochen.
Äpfel schälen und würfeln. In den letzten drei Minuten mitkochen.

Zwiebeln in Ringe schneiden. Petersilie hacken. Beides in einem Esslöffel
Öl andünsten. Herausnehmen, warmhalten.

Kartoffeln und Äpfel abgießen und mit Küchenkrepp etwas abtrocknen. Im
restliche Öl braun braten. Vorsichtig wenden. Zwiebeln darauf geben.

Zubereitung: etwa 40 Minuten
